Pecan Pie Cookies

Ingredients:

8 tablespoons butter

8 ounces of dates, pitted and chopped

2 egg yolks

3/4 cup white sugar

1 cup crisp honey rice cereal

1 cup chopped pecans

1 teaspoon vanilla extract

Directions: 

  • In a saucepan, over medium heat, combine butter, dates, egg yolks, and sugar. Bring to a boil and cook for 2 minutes.
  • Remove from heat and stir in the rice cereal, chopped pecans, and vanilla.
  • Stir and let cool.
  • Once cool, roll into small balls, then roll in cane sugar.

Keep Chuggin’ Along

Today I have a bad case of  the Mondays. It seems as if everything is going wrong and every little thing has worried me, until my country playlist came on.  As I listened to the lyrics of Luke Bryan’s ‘Chuggin’ Along,’ it made me think maybe, just maybe, I can make it through today.

The lyrics explain how a person should keep going, no matter what happens. At the end of each day, you’ve done all that you can and it’s time to pack it away. Remember the good times and let those bad moments and bad days make you stronger. The moral of this post-just keep chuggin’ along. 

And Cruise….

Happy 1st official day of summer! If you are like me, that means it’s time for lounging at the pool and getting tan! Summer also means listening to those hit summer country songs! One of my all-time favorite is Florida-Georgia Line’s ‘Cruise.’

‘Cruise’ is a hit, catchy song, anyone can sing along with. Hearing this song come on the radio makes me “wanna roll my windows down and cruise.” Ok, that was a little play on words there, but it’s true!

With a full summer ahead of you, be sure to make the most of it. Enjoy these long days, catching fireflies, eating ice cream, and whatever else summer entails, while listening to your favorite country songs! I know I’ll be listening to ‘Cruise’ a lot!
