Christmas in July

It’s hard to believe there are only two days left in July! 2014 is flying by.

For today’s post, I thought why not celebrate Christmas in July with some of my favorite country Christmas songs.

Double Chocolate Cookies

Talk about something yummy in the tummy! I hope you enjoy this delicious recipe for Double Chocolate Cookies! 

Ingredients:

  • 2 cups all-purpose flour
  • ½ cup baking cocoa
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 16 ounces. semisweet chocolate, chopped 
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 10 tablespoons (1 ¼ sticks) butter, softened to room temperature
  • 1 ½ cups packed light brown sugar
  • ½ cup granulated sugar
  • 1 ½ cups semisweet chocolate chips

Directions:

1. Preheat oven to 350 degrees. Whisk together the flour, cocoa, baking powder, and salt in a medium bowl; set aside.

2. Melt the chocolate in the microwave (be careful not to overcook). In a small bowl, beat the eggs and vanilla lightly with a fork; set aside.

3. Beat the butter at medium speed until smooth and creamy. Beat in the sugars until combined,  reduce the speed to low and gradually beat in the egg mixture until incorporated. Add the chocolate in a steady stream and beat until combined. Scrape the bottom and sides of the bowl with a rubber spatula.

4. With the mixer at low speed, add the dry ingredients and mix until just combined. Finally add the chocolate chips. Do not overbeat. Cover with plastic wrap and let stand at room temperature until the consistency is fudge-like, about 30 minutes

5. Roll the dough into 1 ½ inch balls and place them on  cookie sheets, spacing them about 1 ½ inches apart.

6. Bake for about 10-11 minutes, until the edges of the cookies have just begun to set but the centers are still very soft, about 10-11 minutes. Set aside to cool.

Prince Cutie’s 1st Birthday

Happy 1st Birthday to Prince George, His Royal Highness! To celebrate his special day, let’s take a look back at when the little prince proved all southerners are royals. “All Southerners are Royals” Leave it to Prince George to prove that all southerners are basically royals. While touring Australia and New Zealand with parents, Prince Williams and Duchess of Cambridge Kate, Prince George was spotted wearing some very southern apparel. His wardrobe included the white on white on white, the John Johns, and of course, the monogram. He has also been seen wearing the ultra-famous gown for his baptism and another monogram for the family photo. Country Singer Serenades Young Fan

All together now…awwwww. 

At a recent concert in Atlanta, Georgia on July 13, country singer Tim McGraw gave a surprising young fan a night to remember. 

During the show, McGraw decided to take things a little slower and sat down on the edge of the stage, with his legs hanging off. He started singing “You Are So Beautiful” as a song for his daughters and wife, Faith Hill; however, the song quickly became about one lucky girl, who jumped up onto the stage, next to McGraw. Fans captured the moment on video with the little girl smiling, waving, laughing, and swaying through it all.

After the song finished, the “Truck Yeah” singer gives the girl a kiss on her forehead then reaches for a Sharpie, signs his acoustic guitar, and hands it over to the girl as a final souvenir for the night. 

McGraw fan Kelly Samford Halcomb captured the special moment on her phone and summoned it up the best way possible: “Why I love Tim McGraw and country music.”

Country Superstar Makes Triumphant Return

It’s the news fans have long been waiting to hear. Country superstar Garth Brooks has signed a record deal with Sony music and is going digital (Blake Shelton can now breathe a sigh of relief).

During a press conference in Nashville today, Brooks casually announced that Sony Music sought him out and new music is coming soon. The “Friends in Low Places” singer stated the music for the upcoming album isn’t any kind of country music, but “Garth music.”

“It’s ever evolving and it stands the test of time. I’m flying the country flag, and that’s the most important thing to me. “Will there be cowboy songs? Damn right there will be cowboy songs,” said Brooks.

As for music being released in digital form, exclusive songs will be able to download on garthbrooks.com in a few weeks.

And finally, as if his announcement wasn’t big enough, Brooks reconfirmed a world tour and said the opening city will be released on July 14th.
