Easy, Breezy Chocolate Truffles

This past weekend, I was craving anything chocolate, but didn’t want to put forth much effort into making a yummy treat. So, I made these easy, breezy chocolate truffles. And trust me, they are very easy to make.

Ingredients:

12 0z. bag milk chocolate chips

1/4 cup sour cream

2 Tbs. almond flavoring

Powdered sugar

Directions:

  1. In a microwave-safe bowl, melt the chocolate chips on medium for 3-4 minutes, stirring halfway through.
  2. Once done melting, stir until completely smooth.
  3. Mix in the sour cream and almond flavoring and blend well.
  4. Refrigerate for 30-60 minutes.
  5. Roll into 3/4 inch. balls and then roll into powdered sugar.

S’mores Dip

S’mores Dip is a must try recipe, before the summer ends. Bring on the chocolate, marshmallow, and graham crackers!

Ingredients:

  • 1/2 tablespoon butter
  • 1 1/2 cups chocolate chips
  • 15 jumbo marshmallows, halved
  • Graham cracker squares

Directions:

  1. Adjust rack to center position of oven and place 8-inch cast iron skillet or regular frying pan on rack. Preheat oven to 450°F with skillet inside. Once preheated, use a pot holder to remove the hot skillet from the oven.
  2. Place pat of butter in the skillet and coat the bottom and sides. Pour chocolate chips in an even layer into the bottom.
  3. Arrange marshmallow halves over the chocolate chips, covering the chocolate completely.
  4. Bake for 5 to 7 minutes or until marshmallows are toasted to your liking.
  5. Remove from heat and rest for 5 minutes. Serve immediately with graham cracker squares.

Chocolate Cake Mix Waffles

We might have passed breakfast time for the day, but haven’t you ever heard of breakfast for supper? Enjoy this simple recipe for Chocolate Cake Mix Waffles!

Ingredients:

  • 1 pkg Devil’s Food Chocolate Cake Mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs

Directions:

  • Preheat a waffle iron to medium heat. Mix batter according to directions on package.
  • Spray waffle iron with non-stick cooking spray. Pour batter onto waffle iron and cook as you would a regular waffle.
  • Serve warm with whipped cream, strawberries, or whatever you may desire!

Chocolate Pound Cake Recipe

I’m one of those people who has a huge sweettooth. If there is chocolate in anything, I’ll eat it. Hopefully you will enjoy this recipe for Chocolate Pound Cake as much as I do!

Ingredients:

Cream Cheese Ribbon:

3 oz. cream cheese, softened
1 Tbsp plain fat-free yogurt
1 Tbsp sugar
1/4 tsp vanilla extract

Batter: 

1 1/4 cups flour
1/3 cup unsweetened cocoa
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup unsalted butter, softened
1 cup sugar
1 large egg
1 tsp vanilla extract
1/4 cup plain fat-free yogurt
3/4 cup low-fat buttermilk
2 Tbsp mini semisweet chocolate chips

Directions: 

1. Preheat oven to 350°F and grease an 8 x 4-inch loaf pan.

2. Combine cream cheese, yogurt, sugar, and vanilla and mix until smooth.

3. Whisk together flour, cocoa, baking powder, baking soda, and salt in a bowl. Beat butter and sugar in a large mixer bowl at medium speed until light and fluffy; beat in egg and vanilla.

4. Combine yogurt and buttermilk in a bowl. Reduce speed to low and add half of flour mixture, beating just to combine. Add yogurt mixture, then finish with remaining flour mixture.

5. Pour half the batter into prepared pan; dollop with cream cheese mixture and swirl layers together. Top with remaining batter and smooth; sprinkle with chocolate chips.

6. Bake for 55 minutes, until a toothpick inserted in the center comes out clean.

Buckeye Brownies

Two of my all-time favorite desserts rolled into one? Count me in! Hope you enjoy this recipe for Buckeye Brownies as much as I do.

Ingredients: 

  • 1 box fudge brownie mix
  • 2 cups powdered sugar
  • 1/2 cup softened unsalted butter
  • 6 TB softened unsalted butter
  • 1 cup creamy peanut butter
  • 1 cup milk chocolate chips

Directions:

1. In a 9×13 pan, make and bake brownie mix according to box directions. Let cool.

2. In a bowl add powdered sugar, 1/2 cup butter and peanut butter. Mix well. Spread over the brownies and pat down. The consistency should be similar to playdough.

3. Melt  chocolate chips and remaining butter together in a saucepan over low heat, stirring occasionally. Spread over brownies peanut butter layer.

A Country Belle’s 12 Days of Christmas: Day 4

Today I’m putting two of my favorite things together: Hershey’s Kisses, Christmas, and crafts. Ok, that was three. I hope this “sweet” decoration will soon find itself in your home. Let me tell you, it doesn’t last long at my house! Enjoy! 

Hershey’s Kisses Christmas Tree

Supplies: 

  • One 12 x 4-inch Styrofoam cone
  • Aluminum foil
  • 4 bags (13 oz. each) Hershey’s Kisses. wrapped in green, red and silver foil
  • Hot Glue 
  • Toothpicks
  • Red Bow
  • Ice cream cones

Instructions: 

1. Cover foam cone with foil.

2. Decorate cone with green foil-wrapped kisses by gluing flat side against the foil-covered cone. Use the remaining red and silver kisses to decorate the tree.

3. Insert one end of a toothpick into the side of each kiss; insert other end into the foam cone, filling in the gaps between the green foil chocolates

4. Place a cheerful bow at top of tree.

5. Glue the remaining kisses to ice cream cones to create your fantasy forest, by following the instructions above!

Peanut Butter Squares

Hate to say it, but I’m just now having lunch (at 2 o’clock in the afternoon). No matter how good my tomato soup is tasting right now, my mind and pallet is already looking forward to dessert. Enjoy this easy, simple recipe for Peanut Butter Squares!

Ingredients:

1 bag chocolate chips

1 jar of peanut butter (smooth or crunchy-your choice)

1 box powdered sugar

Directions:

1. Pour chocolate chips into a microwavable bowl and melt in microwave, until completely smooth.

2. Spread half of melted chocolate chips onto a pan and freeze until hard. Set aside the other half.

3. Mix 1/2 cup of peanut butter with a handful of powdered sugar.

4. Remove pan with chocolate chips from freezer. Spread the peanut butter/powdered sugar mixture on top. Then, spread the rest of the melted chocolate chips.

5. Freeze for about an hour or until hard.

6. Cut into squares and serve.

Crockpot Nutella Hot Chocolate

Seems as if my crockpot and I are becoming best friends lately! Here is another awesome fall/winter recipe that takes minutes to make.  Enjoy!

Ingredients:

  • 5 cups Milk
  • 1/2 cup Hershey’s Cocoa
  • 1/2 cup Nutella
  • 1/2 cup White Sugar
  • 1 cup Hot Water
  • Crockpot

 

Instructions:

  • Combine Cocoa, Sugar, Nutella, and Hot Water in large pan. Stir, and bring to gentle boil.
  • Transfer mixture to crockpot, and add milk.
  • Stir, then cook on high for approx. 2 – 2.5 hours {or low for approx. 4 – 4.5 hours}, or until hot.
  • Pour into mugs or Mason Jar Mugs, then top with Whip Cream and Sprinkles!
